Strawberry Cheesecake Overnight Oats

I am giving you a fair warning that these overnight oats are not the “healthiest” version you will see, but damn are they delicious!!

I have always been a fan of oatmeal. I can remember as a kid those oatmeal packets with the gel you could swirl into them, and running downstairs in the morning to make sure my sister didn’t grab he flavor I wanted. Anyone else?!?

So when the overnight oats craze really started, I jumped right onto the bandwagon. Now… I love things to be sweet I have a major sweet tooth. So these aren’t bland by any means, but like I said earlier they also aren’t the healthiest. There are definitely ways you can change some things up to make these a little healthier though if you want!

So let’s jump right into it!

Here is what you will need;

  • Small mason jars or containers
  • Oats (not the quick oats)
  • Greek yogurt
  • Almond milk
  • Vanilla extract
  • Sweetener of your choice (I love stevia)
  • Chia seeds (you don’t have to have these but they add a great extra bit of fiber in there)
  • Sugar free pudding (cheesecake) prepare like they say on the box.
  • Strawberry gel
  • Fun option; graham cracker crumbs (these are a great way to add a little something on the very top!)

So first you will mix all the oat ingredients together. So the oats, almond milk, yogurt, vanilla extract, sweetener, and chia seeds. Once you have that all mixed up your going to set that aside till you get all your other ingredients together.

Then you grab a cute jar and start layering!! I always start with the oats on the bottom, then go up from there. So easy and so yummy!

Healthy substitution ideas;

Now there are ways you can make this healthier. You just have to get creative. The oats mixture itself isn’t bad. It’s the other toppings that may not be the “healthiest” in the bunch.

Say for instance, the strawberry gel. Now it’s pre-made for strawberry pies. Not a lot of calories, or fat, but does contain sugar, and the ingredients themselves don’t scream “this is good for you!” So if I want to make that a little better I would take some strawberries, frozen or fresh, put them in a sauce pan with a little bit of water and heat them up. Once they are soft you can break them up a bit, and then add Stevia to get them to the sweetness you like.

Or for the cheesecake center, you can use a low fat cream cheese, and again add a sweetener like Stevia, and some vanilla, and make your own cheesecake mixture.

These are merely suggestions! Make this what you want! If you don’t care about it being healthy, buy the premade cheesecake mixture. This stuff is pure heaven in a tub, let me tell you!! It takes a lot of willpower to not just sit down with a spoon and eat!

That’s it!

I usually make 3-5 jars when I make a batch. And they will keep in the fridge for the week. So it’s easy to grab!! And I encourage you to make these your own!! Use the oat mixture recipe and then add what you love. You can try a banana bread style overnight oats, or peanut butter jelly style, carrot cake… so many different ways you can make these!
